I love the spices in chai tea; the smell reminds me of Winter sitting in a warm cafe with my sister, Jac, who is absolutely obsessed with chai. She loves any place that does chai lattes properly – not with that syrupy stuff! I also love homemade granola, so I thought why not combine the two? This is what I came up with – I hope you enjoy it!

Chai, Almond & Coconut Granola
Makes 3 cups
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cardamom
generous pinch of nutmeg
1 1/2 cups gluten free (or bio-dynamic) rolled oats
1 cup coconut flakes
1/2 cup unsalted almonds
2 tablespoons raw honey
2 tablespoons coconut oil
1 teaspoon vanilla extract
1/2 teaspoon salt
2 tablespoons finely chopped crystallized ginger
Preheat oven to 160 degrees Celsius and line a baking tray with baking paper.
Combine spices with honey, coconut oil, vanilla and salt in a large bowl and mix into a paste. Add in oats, coconut and almonds and mix well until everything is well coated in the spice paste.
Spread mixture onto the baking tray and bake for 15-20 minutes, stirring halfway through. Watch the granola carefully and take it out as soon as it turns golden brown; it tends to burn easily.
Once out of the oven, mix the crystallized ginger through and allow to cool.
Serve with milk and berries or eat it sprinkled over your favourite fruit.
