A few weeks ago I was introduced to these crackers by a lovely patient of mine. They are seriously delicious and packed full of essential fatty acids and antioxidants. They’re made out of linseeds (flaxseeds), almonds and sunflower seeds (also known as LSA mix) with a touch of rosemary. The linseeds are wonderful for women in particular, due to their phytoestrogen content.
Phytoestrogens have a similar structure to the hormone estrogen in the body and mimic its activity. They have been found to reduce breast pain in women during menstruation, reduce the risk of breast cancer and reduce symptoms associated with menopause. Linseeds are also great for diabetics as they assist in blood sugar control. The almonds and sesame seeds are great sources of calcium needed for a healthy functioning nervous system and bone strength. A fun fact with rosemary too: it contains a compound called carnosic acid which has been found to fight off free radical damage in the brain.

Flax & Rosemary Paleo Crackers
2 cups LSA mix (ground linseeds, sunflower seeds & almonds)
2 egg whites
1tbs olive oil
1/4 cup sesame seeds
2 tbs fresh rosemary, finely chopped
1/4 tsp sea salt
Preheat oven to 180 degrees celsius.
Mix all ingredients together (it should form a sticky dough).
Between two sheets of baking paper roll out the dough to 3mm thick (more like thin).
Carefully peel off the top sheet of baking paper.
Slice the dough into desired cracker size.
Place on a baking tray and into the oven for 10 -12 minutes or until golden brown.Let cool and then enjoy as a snack on their own or with dips.
Store in an airtight container for up to 2 weeks x
