Summer is the ultimate time to savour all the best seasonal produce. And, what better way to enjoy it all than by making a salad? My boyfriend says, ‘You don’t make friends with salad’ and I always disagree! You can make salads as extravagant or as simple as you like. My favourite one to have at the moment is a Mexican twist on an otherwise simple salad; kale and avocado (hint: it’s all in the dressing).
This salad is wonderfully detoxifying and something you’ll definitely want to add to your recipe repertoire in the New Year. It’s great for your skin, digestion and vision as it’s brimming with antioxidants and full of fibre. I hope you enjoy 🙂
Kale & Avocado Salad with Mexican Lime Dressing
1/2 avocado, peeled and sliced
2-3 stalks of curly kale or Tuscan cabbage, finely shredded
10 cherry tomatoes, halved (I used yellow ones in the photo)
1 small jalapeño, seeded and finely chopped (you can also use jarred jalapeno)
1 clove of garlic, peeled and finely chopped
2 1/2 tsp ground cumin
juice of 2 limes + a little bit of zest
1 tbsp honey
salt + pepper
1/4 cup olive oil
1/4 cup water
Put all dressing ingredients into a blender and blend on high speed until all ingredients are combined.
Combine salad ingredients in a bowl and toss gently.
Serve salad drizzled with as much dressing as you like. There will be a lot of dressing leftover, which is great because its lasts for up to 3 days in the fridge in a sealed jar or container. Use it on whatever salad you like 🙂
